Imperial Wok (Long Handle)
A double-handled karahi is great for slow cooking, but try tossing meat or stir-frying vegetables in one and you'll see the problem — there's no way to shake the pan one-handed. That's what the long handle is for. It's the same Imperial build, just with a single handle that gives you the leverage to toss the pan properly, which matters for anything that needs constant movement to stop the masala catching.
Sizes go from 24cm to 30cm. It also keeps your hand further back from the flame than a two-handled pan does, which is a small thing until you're cooking on a high flame for fifteen minutes straight. No lid on this one — it's built for active, fast cooking rather than covered simmering. PFOA-free nonstick, heavy-gauge aluminium body.
